CURED MEATS

Smoked Air Dried Ham

The best part of the leg from mature, rare breed pigs is used for this award winning ham.  Cured with black pepper, juniper and a sprig of rosemary and smoked 3 times over applewood.

Four Peppercorn Collar

Fresh garlic and a blend of peppercorns add character to this intensely flavoured and richly marbled cut.  The perfect cured meat.

Spiced Loin

A nice layer of soft, creamy fat is left on this sweet loin ham.  Locally grown chilli along with fennel, anise and lemon zest give a delicate spicing.

Air Dried Smoked Belly

The soft, creamy fat from rare breed pigs is perfectly balanced with black pepper and applewood smoke.  This is a dual purpose product, simply serve the sliced version to enjoy this ‘melt in the mouth’ cured belly at its best, or add depth of flavour to your cooking.

Cured Cheek Lardons

Perhaps better known by its Italian name ‘Guanciale’, these lardons are the authentic ingredient in many pasta dishes and an absolute must for Carbonara.

Smoked Streaky Bacon

Bolognese Booster

Made from richly flavoured minced cured meat, this is the secret ingredient to add depth to a Bolognese, stew or ragu. 

Salami

Garlic & Pepper Salami

Made using hand diced back fat, coarse leg and minced shoulder, truly showing off the best of the pig.  Flavoured with Tellicherry peppercorns and fresh garlic.

Fennel Salami

Toasted fennel seeds, a little Aleppo chilli and fresh lemon zest give this ever-popular salami its unique identity

Cotswold Chorizo

Lightly smoked for a deep flavour.  Rare breed pork is paired with locally grown Guindilla chillies to create spicy perfections.

SaltPig Sobrasada

A spreadable salami with a gentle kick of locally grown chilli.  Red rye beer and freshly roasted red peppers gives a perfectly rounded flavour.

Cotswold ‘Nduja

A spicy salami ideal for spreading or cooking.  Plenty of locally grown Grisu chillies and freshly roasted red peppers give a deep colour and intense flavour.
